She resorts to modern pastry techniques and cake designs with an Indian touch using various ingredients and tools to create a cake that usually reflect the relationship of the couple. The hand piped royal icing technique in the close-up shot below is one of her many signature styles.

Marzipan, fondant, gum paste, buttercream, and delicious flavoring ingredients are used to make these unique decorative cakes with prices ranging along with size and components of the cakes. This gravity defying ”Upside down Victorian cake” is as beautiful as it is mystifying.

Speaking of size, she has made some really big fat cakes for the ”big fat Indian wedding”, a uniquely assembled seven tier cake to be precise! This glorious creation is named ”the Saptapadi cake” which resembles the ”seven sacred pheras” of an Indian wedding, with each  tier laced intricately with the traditional elements of an Indian wedding.

This mighty cake (150 kg, 6 feet tall) has got her in the limelight of a lot of wedding bloggers and wedding planners across the country. Although we must mention that each one of her cakes is a beautiful sight.

This Mehendi cake is graced with the royal icing technique which is a sugar-tart technique best suited for intricate designs.The three tiers covered in gorgeous mehendi designs are made of different flavors, namely chocolate, vanilla and red velvet.

Shelly displays her perfectionism with her stained glass inspired cakes taking this sugar art form to a whole new level. She uses motifs such as peacocks, traditional Victorian windows, personalized couple motifs painted with stained glass design which are drool-worthy on white background cakes.
